Binge watching Diners, Drive Ins, and Dives happens quiet often in our home.  I passed my love of cooking onto my middle daughter the most. What makes binge watching with her a blast is her crazy memory.  I have a picture memory, but I have to actual see something.  She on the other hand, has a memory of an elephant! With her high IQ comes an uncanny capability to hear a recipe once and repeat it back perfectly a month later.  That is exactly what happened with this Sweet Cajun Popcorn Recipe!

We were watch the episode containing the South of Beale restaurant.   When they described popcorn they give free with every recipe, well I fell in love.  I thought about making it, but always forget to do so.  After running out of choices of popcorn, I decided I wanted to make it!  So I enlisted my daughter to help.   After she rambled off the recipe, I realized I needed to substitute a couple parts. Mainly the dehydrated brown sugar.  Luckily, I remembered the back of the label of our “kettle corn” popcorn seasoning.  Simply brown sugar, that has been dehydrated and down to a fine powder.  So here is an easy, at home version that is sure to please!

  • Kettle Corn Seasoning (dehydrated brown sugar), 1/4 cup
  • Popcorn Salt, 1/4 cup
  • Paprika, 1/4 cup
  • Cayenne pepper (or red pepper, ground), 1/4 teaspoon
  • Ground Cumin, 1 teaspoon
  • Ground Mustard, 1/2 teaspoon
  • Dried Thyme, 1/2 teaspoon ground
  • Fresh Cracked Black Pepper, 1 teaspoon
  • Garlic, 1 tablespoon ground
  • Salted Butter, melted

First, take any seasonings that need to be ground that aren’t and grind them.  I use a small coffee and seasoning grinder.  In a medium mixing, mix all seasonings together.  Store in an air tight container or a seasoning shaker.  When ready to use, top freshly popped popcorn kernels with a couple tablespoons of melted salted butter.  Generously shake seasoning over popcorn, toss and serve.  Enjoy!
